Paleo friendly banana bread? There you have a healthy autumn snack you never get tired of!
Banana is probably one of the most diverse fruits we have. First of all its over 100 types of bananas, so you’ll find bananas that’s perfect for both sweet and salty snacks. Second the texture is incredible, like no other fruit, cause it’s binding and can be used as a replacement of eggs for instance.
Below you will find a long time favorite of mine, the perfect healthy autumn snack: Banana Bread.
Preheat oven to 180 degrees. Mix together flour, salt and baking soda in a large bowl.
Mash the bananas, preferably in a blender, until it’s completely smooth without chunks. Mix the mashed bananas together with almond milk, coconut oil and maple syrup.
Mix the dry and the wet ingredients together (except the raw cacao powder). Part the mix into two separate bowls and add the raw cacao powder in one of them.
Place baking paper in a bread plate (approximately 1,5 liter) and add the two mixes alternately. This will give you a great pattern inside the banana bread. Top with flax seed and banana bits.
Bake for 50/60 minutes, or until topping is golden brown. Allow to cool before serving. PS: In my opinion the banana bread is better after one night in the fridge.
