I literally never get tired of eating my red pesto. It’s been my go-to lunch and side dish for dinner for the last months now. I love eating green and healthy, but for it to be a sustainable lifestyle – it needs to taste good. Otherwise I will give up after a week.

- 100 grams of sun-dried tomatoes
- 65 grams of raw cashew nuts (not salted)
- 50 grams of pumpkin seeds (not salted)
- 1 tablespoon of oregano
- 1,5 tablespoon of nutritional yeast
- Half cup of water
- A few drops of extra virgin olive oil (not necessary)
Place all the ingredients into a food processor and blend until completely smooth.
Vóila! Smooth red pesto that’s easy to smear! It will stay fresh in the fridge for over a week, so when you crave something salty you have a healthy salty snack option easily accessible.
