Healthy Salty Snacks: Red Pesto

My go-to lunch and side dish for dinner

Craving something salty? But at the same time want to stay healthy? You’ve came to the right place.

My favorite healthy salty snacks contains of nuts, nutritional yeast, sun-dried tomatoes and some spice. You will only need a food processor and five ingredients to make this healthy salty snacks option.

I literally never get tired of eating my red pesto. It’s been my go-to lunch and side dish for dinner for the last months now. I love eating green and healthy, but for it to be a sustainable lifestyle – it needs to taste good. Otherwise I will give up after a week.

Ingredients:

  • 100 grams of sun-dried tomatoes
  • 65 grams of raw cashew nuts (not salted)
  • 50 grams of pumpkin seeds (not salted)
  • 1 tablespoon of oregano
  • 1,5 tablespoon of nutritional yeast
  • Half cup of water
  • A few drops of extra virgin olive oil (not necessary)

Instructions:

Place all the ingredients into a food processor and blend until completely smooth.

 

Vóila! Smooth red pesto that’s easy to smear! It will stay fresh in the fridge for over a week, so when you crave something salty you have a healthy salty snack option easily accessible.

Enjoy it for lunch, in-between meals or as a side dish for dinner. It works well with veggie dishes, salmon and chicken.
